The days are getting longer and simple recipes are our go-to to make the most of the sunlight. Super nutritious and flavorful (great source of protein, fiber, iron and calcium), we’re loving this recipe from our friends at Orga Foods.


2 cups well-cooked Chickpeas, drained

1/2 cup Tahini

1/4 cup Extra Virgin Olive Oil, plus more for drizzling

2 cloves Garlic, peeled


1 tbsp ground Cumin or Paprika

Juice of 1 Lemon

Chopped fresh Parsley

1/4 cup Water

Za’atar and Sesame Seeds for garnish

(Make your own Za’atar: 1 tbsp roasted sesame seeds, 1/4 cup sumac (or lemon zest), 2 tbsp thyme, 1 tbsp marjoram, 1 tbsp dried oregano, 1 tsp coarse salt). Grind the sesame seeds, add remaining ingredients.


Place tahini, olive oil, garlic, salt, cumin or paprika, and lemon juice in a food processor and begin to blend.

Add chickpeas slowly, along with water, and continue to blend until desired consistency is reached.

Top with Za’atar and sesame seeds…and enjoy!
