Although organic turkeys are particularly difficult to come by this year, Erewhon Market has secured one of the best―Mary’s Certified Organic Free-Range Turkey. Since 1954, Mary’s has been a family-owned and operated farm concerned with the importance of animal husbandry and the responsibility to protect the welfare of animals.

Mary’s Certified Organic Free-Range Turkeys are raised on healthful grains and are allowed to roam in areas four times the size than the areas provided by the average commercial turkey ranch. Their high-protein diet provides an optimal amount of nutrients. As a result, they grow into bigger and more flavorful turkeys than those typically found in an ordinary supermarket.

Mary's Certified Organic Free-Range turkeys are full-flavored and savory throughout with a taste that is sure to impress your holiday guests.

Reheating instructions:

Turkeys (10-12lbs): Remove turkey from refrigerator and allow to sit at room temperature for 1-2 hours. Preheat oven to 350°F (if using a convection oven, turn fan to LOW or OFF position).

OPTION 1:
Keep turkey in its oven-safe bag. Cover tightly with foil and bake at 350°F for 1.5 hours. NOTE: Add 30 minutes to initial cook time for 18-20lb turkey. Remove foil and carefully cut the top of the bag. Continue to bake an additional 15 minutes to brown and crisp the skin. To get a darker golden sheen, brush with melted butter. Allow to rest for 10 minutes before carving.

OPTION 2:
Pour one cup of stock, water or white wine into your roasting pan. Place turkey on a wire rack, or create a rack by placing the turkey on a bed of coarsely chopped root vegetables. Cover tightly with foil and bake at 350°F for 1.5 hours. NOTE: Add 30 minutes to initial cook time for 18-20lb turkey. Remove foil and carefully cut the top of the bag. Continue to bake an additional 15 minutes to brown and crisp the skin. To get a darker golden sheen, brush with melted butter. Allow to rest for 10 minutes before carving.
